Today I am sharing our family’s fresh strawberry pie recipe with you as well as a gluten free, sugar free version. It’s been well used and well loved over the years.
June Days
June days are upon us. The sun greets me with its warm glow as I wander into the meadow in search of flowers. The grasses sway in the breeze as their plumes resemble wheat stalks in the wind. The daisies grace the roadsides and ditches with their white petals and gold centers. Ever since I was a little girl I have loved to go outside and collect wildflowers. Most I would make into bouquets and bring inside and the rest would safely be stored between the pages on our largest book to be flattened and preserved for a winters afternoon of crafting.

As the days of June quickly pass by the local berries begin to ripen and harvest time has begun!
This morning we returned home with our baskets bursting with delicious red strawberries. What blessings of provision are all around us. The next few days will be busy days processing the berries for jams, pies and freezer. I have a delicious treat planned for dessert and I do so wish you could join us, but since that is not possible I hope to share our well loved recipes with you in the description box below as we make both a regular and gluten free fresh strawberry pie.

Making Gramma’s fresh strawberry pie recipe has become a yearly tradition in our home and tonight we hope to celebrate the end of strawberry processing with a piece of it.

The gift of battered recipes
I’ve begun to copy out our family’s favourite recipes in the old fashioned way by hand. There’s something special about pulling out a battered recipe card. It usually means its a tasty recipe and one that has helped serve others for years. What a gift to receive recipes from mothers and grandmothers that have served through the generations. I hope to set aside some time this summer to put together my own recipe box to pass onto my daughters in the coming years.

Fresh Strawberry Pie Recipe:
Fresh Strawberry Pie

Enjoy eating seasonally with this delicious fresh strawberry pie.
Ingredients
- 1 cup flour
- 2 tbs sugar + 1/4 cup sugar
- 1/2 cup butter
- 1 egg yolk
- 2 tbs corn starch
- 2/3 cup water
- 1/3 cup strawberry or raspberry jam
- 1 tsp vanilla extract
- 1 quart strawberries or 4 cups
Instructions
- Combine flour, 2 tbs sugar, yolk and melted butter.
- Press into a 9 inch pie plate.
- Bake at 425 F for 8-10 min. Cool
- Combine cornstarch, 1/4 cup sugar in a saucepan. Gradually add 2/3 cup water, 1/3 cup strawberry or raspberry jam. Simmer at medium heat until boiling. Let boil for 2 minutes, stirring constantly.
- Remove glaze from heat, stir in 1 tsp of vanilla extract
- Place strawberries in pie and pour the glaze over top.
For the Gluten Free / Sugar Free Version:
Simply substitute the regular flour 1:1 with Bob Red Mills Baking Flour
substitute the sugar 1:1 with Lakanto Monk Fruit with Erythritol
