Zucchinis coming out of your ears? This delicious bread is a great way to use up extra zucchini.
Ingredients
- 3 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 3 tsp cinnamon
- 1 cup oil
- 3 eggs
- 2 cups sugar
- 3 tsp vanilla
- 2 cups zucchini

1. Beat eggs and oil; add sugar, vanilla and zucchini. Slowly incorporate the dry ingredients into the mixture. Pour into 2 greased loaf pans. Bake at 350F for 1 hour.

I love shredding all my extra zucchini into freezer bags with the amount needed for this recipe. All I have to do on a fall day is grab the bag from the freezer and start baking.
September Days
September has arrived with its large white fluffy clouds and masses of golden rod covering the landscape. The crickets continue their tune and the first hint of autumn is in the air. The days are golden and warm and the nights cool. The final push of harvest is upon us as the chrysanthemums begin blooming and the pumpkins and scent of apple pies tell me its Autumn.
Routine begins again the fall as the kids trudge around the house with their book stacks looking for a cozy corner and blanket for reading. Tea is a definite must and the mornings begin with a large pot upon the dining room table. The busyness returns as well and rather than complain about it, I remind myself that God gives grace for each new day and to focus on taking one day at a time.
