Zucchini Bread Recipe
- 3 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 3 tsp cinnamon
- 1 cup oil
- 3 eggs
- 2 cups sugar
- 3 tsp vanilla
- 2 cups zucchini
1. Beat eggs and oil; add sugar, vanilla and zucchini. Slowly incorporate the dry ingredients into the mixture. Pour into 2 greased loaf pans. Bake at 350F for 1 hour.

I love shredding all my extra zucchini into freezer bags with the amount needed for this recipe. All I have to do on a fall day is grab the bag from the freezer and start baking.
September has arrived with its large white fluffy clouds and masses of golden rod covering the landscape. The crickets continue their tune and the first hint of autumn is in the air. The busyness returns as well and rather than complain about it, I remind myself that God gives grace for each new day and to focus on taking one day at a time.
